Skillet Noodle Dish
from Joan
  • 1/2lb of ground meat
  • 1/2 cup uncooked spaghetti, broken into 2" pieces
  • 1/2 cup dry rice
  • 1 can of mushrooms
  • 2 cups of beef broth (I use water with bouillon)
Cook meat, then add everything else. Bring to a boil, then reduce heat and cook 15 minutes until rice and pasta are done. Serve with Worcestershire sauce or sour cream on top.

Serves 4 for under $2.00

Shepard's Pie

  • 1 pound ground beef
  • 1 onion
  • Salt and Pepper
  • Beef Bouillon
  • Flour
  • Frozen Corn
  • Instant Mashed Potatoes
Brown together in sauce pan, adding a little salt, pepper or whatever to taste. I add a teaspoon of bouillon to it. Add flour to the meat when it's cooked, add water, and you have gravy.

Spread some frozen corn on top, put instant mashed potatoes on that. Bake 15 minutes till it bubbles. (However hot you want the oven, it's not important.)

Potato Chowder

  • 4-6 potatoes, cut in small cubes
  • Water
  • Milk
  • Salt and Pepper
  • Chopped Onion
Just cover with water and milk, margarine, salt and pepper, and a chopped onion. Cook until the potatoes start to fall apart. Mash the potatoes in the liquid and let cook untill a little thicker. Sometimes I add kielbasa bits, chopped ham or bacon to it. My husband puts cheese on his and I usually add about 1/2 cup of frozen corn.

Taquitos

  • Tortillas
  • Cheese
  • Any type of meat
  • Eggs
Grill in skillet and make like a pizza (very thin) then roll up and serve with whatever or nothing at all. We like leftover chili or spaghetti sauce or salsa on them.

Each person can have 3 for about 10 cents each.

Fried Rice

  • 6 cups cooked white rice
  • 6 eggs
  • 1/2 lb chicken
  • 1/2 lb beef
  • Vegetables of your choice
  • Soy Sauce
  • 1/4 cup butter
Mix in large wok or pot. What's so frugal about this is you can use any leftover meat you have from other meals - that 1/2 steak you didn't finish, 1 pork chop that was left over, the chicken you meant to use yesterday and forgot about.
