The Holiday Season is definitely here. This can be a stressful and expensive time for all parents, especially for those of us living on one-income. So from now until Christmas, I will be discussing different ways to save money during the Holidays.

Turkey is so inexpensive this time of year, that I usually buy two or three to put in the freezer. The only problem with turkey is what to do with all the leftovers. So this week I will share a few of my favorite turkey leftovers recipes, and provide some additional links to other sites with recipes.

These are my three favorite recipes using leftover turkey. I'm placing these on separate pages so they will be easier to print-out.

  • Easy Turkey Casserole
    This recipe only uses three ingredients, turkey, condensed soup, and leftover stuffing, but it is very tasty.

  • Turkey Stuffed Crescent Rolls
    This is an easy and economical meal, and my husband and children really love it!

  • Barb's Turkey Enchiladas
    Living in Arizona, we enjoy eating foods with a Southwestern accent. I was experimenting with some ingredients one day, and made these delicious enchiladas using cream cheese and leftover turkey.
