Cinco de Mayo, or May 5th, is a celebration remembering the victory of the Mexicans over the French army at The Battle Of Puebla in 1862. Here are some of my favorite Tex Mex recipes to help celebrate this holiday.

1. Chili Rellenos Quiche

Chill Rellenos Quiche reminds me of a spicy lasagna. You can use mild or hot chiles, depending on your preference.

2. Deep Fried Chili Rellenos

My kids loved these cold, even. These only need 3 ingredients and you can use mild chilis or hot; it's up to you.

3. Tamale Pie

This Tex Mex recipe has ground beef, creamed corn and corn meal.

4. Chicken & Rice Wrap

Combine chicken, spanish rice, corn and salsa in a tortilla, top with shredded cheese, and you have a hearty meal for your family.

5. Beef Chimichangas

Mound shredded stew meat and refried beans in tortillas and deep fry to make these delicious, homemade chimichangas.

6. Chicken Enchilada Casserole

Chicken enchilada casserole is so tasty and creamy, and makes a large amount for leftovers.

7. Southwest Chicken Manicotti

This recipe for chicken manicotti is a good way to use up any leftover chicken or turkey you may have in your refrigerator. Use a teaspoon for ease in filling the manicotti with the chicken mixture. I used green chili enchilada sauce instead of the salsa called for in the recipe.

8. Taco Dip

Using only 2 ingredients, this is an easy but delicious dip for tortilla chips.

9. Sandy's Guacamole Dip

This is my sister's recipe for guacamole dip, excellent with tortilla chips.

10. Slow Cooker Mexican Porkchops

Porkchops are often so dry, but not with this slow cooked method. Serve over rice, top with cheese and sour cream if desired.
