"We'll be camping out (something I haven't done since I was a kid.) Problem: we will only have a stovetop to cook on...no oven and, heaven forbid, no microwave! Does anybody have any not-to-complicated stove top recipes for us?"

A family camping trip can be an affordable and fun alternative to the more traditional family vacation this summer. This week, I would like to share some camping recipes, as well as links to other About.com sites that will help you plan the perfect camping trip for your family.

  • Buy pre-packaged pancake mixes for breakfast- then all you have to do is pour and fix.
  • Freeze bacon and you can also fry it frozen and it will be fine.
  • We don't normally eat hotdogs but while camping I always take them...something about the open air, the campfire and a weenie on a stick.

Here is a recipe for the campsite:

HOBO STEW

  • 4-5 potatoes thinly sliced
  • 3-4 carrots thinly sliced
  • 3 sticks of celery sliced
  • 1 can green beans-drained
  • 1 large can of tomatoes
  • 1-2 lbs of ground beef
  • salt and pepper
Brown beef in a little oil, then add potatoes and carrots and cook for about 10 minutes; then add celery, tomatoes and green beans. Cook for another 20 minutes or until potatoes or done.

  • You can also fix pork chops in a skillet with sliced potatoes on top sliced onions and a can of mushroom soup!! I brown the chops first then place the thinly sliced potatoes on top, onions and top with soup. Cover with lid. Let cook for about 30 minutes or until chops are done and potatoes are cooked.

We love the mountain pies. You need the iron maker - use 2 slices of bread and filling of choice, ham and cheese, pie filling, the list is endless. Fold the iron frame together and toast it in the fire.

We also make biscuits on a stick. For this you use canned biscuits that you wack against the counter and bake - you know the kind? Flatten the dough and wrap it around a stick that is about 1 inch, or bigger, in diameter. The whole top of the stick is covered like a pull on hat. Make sure all seams are sealed well. We use 2 biscuits if they are really small. Toast the biscuit over fire, the thinner it is the quicker it cooks, but take your time and don't burn the tip! When it is done it should come off easily from the stick. Its hot, then fill the hole with anything you like. My favorite is peanut butter and choc. chips, the chips and peanut butter melt and it is great! The kids love them.
