Summertime is quickly approaching in many parts of the world. Many parents are busy with soccer and little league practice so there is little time to bake. With the hotter weather, these cool, easy, summertime desserts are perfect to get you out of the kitchen quickly.

Gelatin Ice Cream Dessert

  • 1 1/2 cup boiling water
  • 2 - 3oz pkgs strawberry gelatin (You can get the 6 oz pkg)
  • 2 cup cold water
  • 1 pint vanilla ice cream, softened
Stir gelatin with boiling water in large bowl for two min until dissolved. Stir in cold water. Add ice cream and stir until smooth. Pour into serving bowls (or one big bowl, plastic cups would be great). Chill 3 hours.

Candy Mousse Pie

  • Oreo Crust
  • 1 Large Hershey Bar (can have it with almonds if you like nuts)
  • 1 Container Kool Whip
Melt the candy bar just enough in the microwave to where you can stir it up, but it's not boiling hot. Mix it with the Kool Whip, and then pour into the oreo crust. You can either chill it in the fridge or freezer; it's great either way.

Cool Whip “Cheater” Pies

Mix 2 packages of pudding and 2 cups of milk thoroughly. Gently fold in 1 container of Cool-Whip. Spoon into a graham cracker crust. Chill.

OR

Mix 1 package Jello with 2/3 cup boiling water. Mix until completely dissolved, about 2 minutes. Add ½ cup cold water and enough ice cubes to make 1 ¼ cup. Stir until slightly thickened. Remove any remaining ice. Gently fold in 1 container of Cool-Whip. You can also mix in some sliced fresh fruit (strawberries are luscious) at this point. Refrigerate about 10 minutes, until filling will mound. Spoon into a graham cracker crust. Chill at least 2 hours.

Banana Pudding

  • 1 8oz. tub Cool Whip
  • 1 -4 serving size instant vanilla pudding
  • 1 can sweetened condensed milk
  • 1 1/2 cups cold water
Mix well and layer with crushed vanilla wafers and sliced bananas. Chill.

Raspberry Salad

  • 3 cups water
  • 2 packages Americana Tapioca Pudding
  • 1 small box of Raspberry jello
  • 1 box of frozen (or fresh) raspberries
  • 1 small tub of cool whip
Boil water, pudding, and jello until thick. Cool completely, then fold in cool whip and raspberries.

I usually double the recipe and it makes a nice big bowl. Yummy!

Jello Salad

  • 2 boxes Lime jello
  • 2 C hot water
  • 1 C cold water
  • 1/2 pint whipping cream
  • 1 - 8 oz. block cream cheese, softened
  • 1 can (15 oz. I think!) crushed pineapple, drained very well
Mix jello and hot water until jello is dissolved, then add cold water. Chill until jello is ALMOST set. In a mixing bowl, whip cream according to package directions. Then add softened cream cheese and blend on medium speed until well mixed. Then add partially set-up jello and pineapple and mix on low speed until all ingredients are well blended. pour into 9 X 11 baking dish and refrigerate another 1-2 hours.
