Adam's Coconut Pie

Easy to make, this recipe makes two coconut pies.

INGREDIENTS:

  • 1 stick (1/2 cup) margarine softened
  • 3/4 cup sugar
  • 4 eggs
  • 1 can sweetened condensed milk
  • splash of regular milk
  • 1 teaspoon vanilla
  • 12 ounces coconut (I used 2 7-ounce bags)
  • 2 frozen regular pie shells

PREPARATION:

Cream margarine and sugar. Beat in eggs and condensed milk. Add regular milk and vanilla. Stir in coconut. Divide between 2 pie shells. Cook on baking sheet 350 for about 40 minutes. Freezes well. - Lynn
