Ingredients:
- 1/2 cup margarine, softened (1 cube)
- 1 cup sugar
- 2 eggs
- 1 1/2 cups flour
- 1/2 teaspoon salt
- 1 teaspoon baking powder
- 1/2 cup milk
Preparation:
Cream margarine and sugar until light and fluffy. Add eggs; beat well.Mix flour, salt and baking powder. Add in thirds, alternating dry ingredients with milk.
Add about 2 tablespoons finely grated lemon rind to batter.
Pour into greased 9 x 5 inch loaf pan. Bake at 325 degrees for about an hour or until done when toothpick test is dry.
Combine 1/4 cup sugar and 2-3 tablespoons lemon juice (juice of one lemon). Heat gently until syrup forms and sugar is no longer grainy. Spoon evenly over warm bread. Remove from pan.
