Cherry Pie Filling

If you are lucky enough to have some extra cherries, then you can make this cherry pie filling; makes 4 pints.

INGREDIENTS:

  • 8 cups tart cherries
  • 5 tablespoons cornstarch
  • 2 1/2 cups sugar

PREPARATION:

Wash and pit cherries. Drain. Combine sugar and cornstarch. Stir in cherries; let stand until juices begin to flow, about 30 mins. Cook over medium heat until mixture begins to thicken. Ladle pie filling into can or freeze jars or plastic freezer bags, leaving 1/2 inch of headspace. Cool at room temperture, not to exceed 2 hours. Seal, label, and freeze. Yield: about 4 pints. - Stacy
