Pea Salad

Canned peas, hard-boiled eggs and mayonnaise make up this easy side dish.

INGREDIENTS:

  • 2 15 oz. Cans Early Green Peas, drained
  • 3 Hard-Boiled Eggs, chopped
  • One Bunch Green Onions, sliced (optional)
  • Mayonnaise
  • Salt and Pepper

PREPARATION:

In a medium sized bowl, combine peas, eggs, and onion. Add enough mayonnaise (about 1/2 cup) to coat and moisten. Add salt and pepper to taste. Chill.
