Cranberry Nut Bread

This holiday bread uses fresh cranberries; perfect for Christmas.

Prep Time: 15 minutes

Cook Time: 1 hours,

Ingredients:

  • 3/4 cup orange juice
  • 1 egg
  • 2 tablespoons oil
  • 2 cups flour
  • 3/4 cup sugar
  • 1-1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 cup chopped cranberries
  • 1/2 cup chopped walnuts

Preparation:

Preheat oven to 350 degrees.

Combine juice, beaten egg and oil. Stir together flour, sugar, baking powder, salt and baking soda. Stir in juice mixture. Fold in cranberries and nuts. Pour into lightly greased and floured pan. Bake 350 degrees for 50 to 60 minutes or until toothpick inserted in center comes out clean. Cool ten minutes and remove from pan to cool on wire rack.
