Sweet Potato Pudding

My version of sweet potato casserole! The amount here feeds my family of 3 so you might want to double it! Ingredients:
  • 2 1-lb cans of sweet potatoes or Yams
  • 3 eggs
  • 1 cup milk
  • 1/8 teaspoon nutmeg
  • 1/2 teaspoon cinnamon
  • 1 cup pecans pieces
  • 1 cup packed light brown sugar( 1/2 c. for recipe and 1/2 for topping)
  • 2 tablespoons of dark syrup or pure cane syrup
  • 1/4 teaspoon salt
  • 1/4 teaspoon vanilla
  • 2 tablespoons of Bourbon
  • 1/2 stick or 4 tablespoons of softened butter
Preheat oven to 350. Mash the potatoes in a bowl until very smooth...add the eggs and milk and mix well. Then add the nutmeg, cinnamon and half of the pecans, 1/2 half cup of the brown sugar, syrup, salt, vanilla and bourbon. Mix well. Pour the mixture into a 1 1/2 quart round baking dish. Combine the remaining pecans and the remaining 1/2 c. brown sugar with the butter and mix well... Dot the top of the potato mixture with the brown sugar/butter mixture...Bake for about 45 minutes or until nice and bubbly hot...ENJOY

You can leave out the pecans for anyone that has allergies..it is pretty much an optional ingredient...and for those that are really against using any alcohol (this does cook off and just leaves the flavor) you could substitute orange juice or maybe even apple juice. - MarshaSue
