Grilled Maple Sweet Potato Slices

From About.com

Flavored with maple syrup and cinnamon, grilled sweet potatoes are a nice change from regular potatoes.

Prep Time: 5 minutes

Cook Time: 7 minutes

Ingredients:

  • 2 sweet potatoes
  • 1 large zip-lock bag
  • 1/2 cup maple syrup
  • 1 teaspoon cinnamon
  • 1/4 cup brown sugar
  • 2 butter pats
  • aluminum foil

Preparation:

Wash sweet potatoes and slice lenghthwise about 1/4-inch thick. Place maple syrup, cinnamon, and brown sugar in zip lock bag, add sliced sweet potatoes and let air out before you seal up. Mix with your fingers so that all the slices are coated. Marinate in fridge until ready to cook.

When ready to grill, place entire contents of bag in foil and close up, poke some vent holes on top so steam can escape and put on grill for about 5-7 minutes. You want them to be tender but still crisp.

Take out of foil and grill to brown more if desired. - Julie, forum member
