Porcupine Balls

Porcupine Balls are are fried meatballs cooked with rice.

Prep Time: 10 minutes

Cook Time: 30 minutes

Ingredients:

  • 1 pound ground beef
  • 2 boxes beef flavored Rice-a-Roni
  • 1 egg

Preparation:

You need 2 boxes of Beef flavored Rice-a-Roni. Take the hamburger, one box of rice, seasoning pack from said box and 1 egg and mix all together. (You will actually not use the whole box of rice, maybe about 2/3's of it). Make into balls and fry them up. When done remove from heat and drain some of the grease. I use some of the grease instead of butter to make the rest of the rice. Then I just make the rest of the rice as directed on the box, except I use 4 cups water (enough for both boxes of rice). When the water is boiling I throw the meatballs back in with the rice and cook as directed on the box. - Robin
