Ingredients:
- White rice
- 1-2 pounds ground beef
- 1-2 onion, diced
- 1 can spaghetti sauce
- 4-6 green peppers
Preparation:
While I cook a pot of ordinary white rice, I sauté a couple of diced onions in a bit of butter until they are translucent.I add ground beef to the onions and keep cooking until the beef is browned, then drain off the fat.
I mix roughly equal amounts of rice and meat/onion. There's usually quite a bit more of this than I'll need for the peppers, as we like it by itself, too.
I use a can of spaghetti sauce, usually the three cheese or the mushroom kind, and mix it in with the rice and meat mixture until the whole thing is moist but not soupy. It sometimes takes more than a can, sometimes less.
I cut the tops off the peppers, counting one or two per person, depending on how big they are, and clean out the seeds and membranes. Then I stand them close together in a baking dish or pan with reasonably high sides.
I spoon the rice and meat mixture into the peppers, not packing it too tight (it expands a bit), and mound the tops a little. Then I pour more spaghetti sauce over everything until it comes about halfway up the depth of the pan and the top of every pepper is covered.
I bake them at 350 F for an hour to an hour and a half (usually the longer time).
