Ingredients:
- 1 large onion
- 1 tablespoon margarine
- 1/4 cup water
- 1 pound ground beef
- 1 tablespoon chili powder
- 1/4 cup drained diced mild green chiles
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt (optional)
- 1 14-ounce can diced tomatoes, drained
- 2/3 cup frozen corn kernels
- 1 8-ounce package cornbread mix
- 1/3 cup milk
- 1 egg
- 1 cup grated cheddar cheese
Preparation:
Preheat oven to 400.In skillet add diced onion, margarine and water and cook until onions are clear. Add ground beef, chilli powder, drained chillies, garlic powder and salt and brown meat. Stir in tomatoes and corn once meat is browned then remove from heat. Mix Cornbread mix, milk, and egg. Put cornbread mix in a greased 9x13 pan add meat mixture over cornbread layer.
