Dairy-Free Banana Muffins

These muffins are dairy free for those with allergies.

Prep Time: 10 minutes

Cook Time: 30 minutes

Ingredients:

  • 1/2 cup vegetable margarine
  • 1 cup sugar
  • 2 eggs
  • 1 cup mashed banana
  • 3/4 tsp baking soda
  • 1/2 tsp salt
  • 1 cup flour

Preparation:

Grease one 12-cup muffin pan or use paper inserts.
Cream margarine and sugar. Add eggs, beating well, and stir in banana. Sift dry ingredients. Add to banana mixture, mix well. Pour into muffin cups and bake at 350 for 25-30 minutes.
