Pumpkin Bread

You can use canned or fresh pumpkin when making this bread.

INGREDIENTS:

  • 3 1/2 cups of flour
  • 2 tsp. baking soda
  • 1 1/2 tsp. cinnamon
  • 1/2 tsp. baking powder
  • 2 cups of white sugar
  • 2/3 cups shortening
  • 4 eggs
  • 1/2 cup of water
  • 1 16oz can pumpkin or 2 cups of your own pumpkin

PREPARATION:

Stir the dry ingredients together; set aside. Cream the sugar and shortening then add the eggs, pumpkin and water; mix well. Add the dry ingredients (slowly), mix well and then pour into two greased 9X5 loaf pans. Bake for approx 55-60 minutes in a 350 degree oven.

I like to substitute the water with apple juice- gives it a little more flavor. - MarshaSue , forum member
