Hash Brown Casserole with Eggs

This recipe is perfect for a late Christmas morning brunch.

Prep Time: 20 minutes

Cook Time: 45 minutes

Ingredients:

  • dozen eggs
  • 32 oz. package of hash browns
  • green peppers if you want
  • yellow peppers if you want
  • 2 bags of shredded cheese (whichever you prefer)
  • mushrooms if you want
  • onion
  • sausage (any type of breakfast meat)

Preparation:

Get a 9x13 glass pan and spray with pam, (I used the olive oil, very thinly). Layer the bottom with hash browns add your vegetables first then your meat which ever you choose.

In a separate bowl whip up your dozen eggs and add over the top of step 1.

Now add the cheese for the last layer (I used the cheddar/Monterey jack and I have also used the cheese with spices).

Bake this at 350 for about 45 minutes to an hour ...check periodically to make sure the cheese isn't burning. I hope you enjoy this !!

P.S. I served this for dinner and used for breakfast the next day. You can serve this with salsa on the side, salsa chips and salsa bread too...theses are just a few things for a good dinner. - Butterfly2k, forum member
