Cherry Preserves

Here's a recipe for homemade cherry preserves that makes about 4 half pints.

Prep Time: 10 minutes

Cook Time: 20 minutes

Ingredients:

  • 2 lbs pitted cherries
  • 4 cups sugar

Preparation:

Drain juice from cherries; set cherries aside. Add sugar to juice (if there isn't enough juice to dissolve sugar, add a little water cook until sugar dissolves, stirring occassionally. Cool. Add cherries; cook rapidly until cherries become glossy, about 15 mins. Cover and let stand 12 to 18 hours in a cool place. Bring to a boil; boil hard 1 min. Remove from heat. Skim foam if necessary. Ladle hot preserves into hot jars, leaving 1/4 inch head space. Adjust two piece caps. Process 15 mins in a boiling-water canner. Yield: about 4 half pints. - Stacy, forum member _z_homeparents_z_);
