This easy coffee cake can be made with Jiffy mix or Bisquick.
Prep Time: 10 minutes
Cook Time: 30 minutes
Ingredients:
- 2 cups baking mix (I like Jiffy, but Bisquick should work)
- 1/4 cup sugar
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1 cup raisins
- 1 egg
- 2/3 cup apple juice
- 2/3 cup baking mix
- 2/3 cup brown sugar
- 1 teaspoon cinnamon
- 1/2 stick margarine
Preparation:
Stir the baking mix, sugar, cinnamon, nutmeg, and raisins together. Add the egg and juice and mix well. Spray a 9 inch round cake pan with baking spray. Pour batter into pan. Mix the baking mix, brown sugar, and cinnamon together. Work the margarine into it until it's crumbly. Sprinkle over the batter in the pan.
