Ingredients:
- 1 cup sifted all-purpose flour
- 1/4 cups sugar
- 1 teaspoon grated lemon peel
- 1/2 teaspoon vanilla extract
- 1/4 cup soft butter or margarine
- 5 packages (8 ounces each) soft cream cheese
- 1 3/4 cups sugar
- 3 tablespoon flour
- 1 1/2 teaspoons grated lemon peel
- 1 1/2 teaspoons grated orange peel
- 1/4 teaspoon vanilla extract
- 5 eggs
- 2 egg yolks
- 1/4 cup heavy cream
Preparation:
Crust: Combine flour, sugar, lemon peel and vanilla. Make a well in the center and add the egg yolk and butter. Mix well with finger tips until dough cleans the side of the bowl.Form into a ball, wrap and refrigerate for about 1 hour.
Preheat oven to 400F, grease the bottom of a springform pan. Roll out 1/3 of dough and fit it to the bottom side of a 9inch springform pan. Bake 8-10 minutes until golden brown. Roll the remaining dough into 3- 2 1/2" by 10" strips.
Put the springform pan together and fit the dough strips to the side of the pan, joining ends to line completely. Trim the dough so it only comes about 3/4 of the way up the side of the pan. Refrigerate until ready to fill.
Filling: Preheat oven to 500F.
Combine the cheese, flour, sugar, lemon and orange peels and vanilla until just blended. Beat in the eggs and egg yolks one at a time. Add the cream, beating until well combined.
Pour into the (chilled) springform pan. Bake 10 minutes at 500F. Reduce oven temp to 250F and bake 1 hour longer.
