Popcorn Granola

Made with microwave popcorn, nuts, raisins and coconut, popcorn granola makes a nice afterschool snack for the kids.

Prep Time: 10 minutes

Cook Time: 6 minutes

Ingredients:

  • 1 regular size bag of microwave popcorn
  • 1/2 cup chopped walnuts
  • 1/2 cup coconut
  • 1/2 cup sunflower nuts
  • 1/2 cup raisins
  • 1/3 cup honey
  • 1/3 cup butter
  • 1 teaspoon cinnamon
  • 1/2 teaspoon vanilla

Preparation:

Grease a 13X9 microwave safe dish. Cook popcorn as directed then remove any unpopped kernels. In large bowl combine popcorn, walnuts, coconut, sunflower nuts, and raisins, Set aside. Place honey, butter, cinnamon and vanilla in a 2 cup microwave safe cup. Micro on high for 1-2 minutes, until butter is melted. Drizzle over popcorn mixture, toss evenly to coat. Transfer mixture to the prepared pan and micro for 5-6 minutes until raisins begin to plump, stir once 1/2 way through. Spread on waxed paper to cool. Makes 8 cups.- Chris, forum member
