Chicken Chow Mein

Serve this chicken, with bean sprouts, bamboo, water chestnuts and molasses, over rice or chow mein noodles.

INGREDIENTS:

  • 1 cut-up chicken or boneless chicken breast and thighs
  • 2 cups of water
  • 1-2 onions chopped
  • 1-2 cups of celery chopped
  • 1/4 cup cornstarch
  • 1/4 cup soy sauce ( I use a tad more)
  • 1 can ( 16 ounce) drained bean sprouts
  • 1 can ( 6 ounce) bamboo shoots
  • 1 can ( 6 ounce) water chestnuts -drained
  • 3 tablespoons molasses

PREPARATION:

Place chicken, water, onions and celery in crockpot and cover on low for about 8 hours. I do this on high for about 5-6 - last hour before you serve you turn it on high if you have been cooking on low. If you used a whole cut-up chicken take it out, let it cool slightly and debone it and cut into large chunks. While chicken is cooling slightly, combine the cornstarch and soy sauce and whisk into the liquid. Add the bean sprouts, bamboo, water chestnuts and molasses, stir well, then add the chicken back and let cook for another hour or so.

Serve over rice or chow mein noodles. - MarshaSue
