Quick, Easy, and Economical Christmas Dinner Recipes

The Holiday Season is here. And for many of us, food is one of our biggest expenses this time of year. Guest author Mary Ellen Goodwin, a stay-at-home mom, contributed two of her favorite economical and easy holiday side dishes.

Quick, Easy, and Economical Christmas Dinner Recipes

With Christmas approaching fast, we are all looking for ways to save a few pennies...if possible! Whether you have Christmas dinner on Christmas Eve or Christmas Day, these recipes will make great side dishes to your ham or turkey and cost very little to make. They also involve very little preparation time, leaving you with more quality time to spend with your loved ones. Hope you and your family enjoy them. Merry Christmas!

Jiffy Corn Casserole

Ingredients:

  • 1 16-ounce can cream corn
  • 1 16-ounce can regular corn (drained)
  • 2 eggs
  • 1 small onion, chopped
  • 1 pint dairy sour cream
  • 1 package Jiffy corn muffin mix
  • 1 stick (1/2 cup)butter or margarine
  • 2 cups cheddar cheese

Melt butter. Saute onion in butter. Mix both cans of corn in with eggs. Add sauted onions and corn muffin mix. Put this mixture in greased 13x9 pan. Spoon sour cream on top and sprinkle with cheddar cheese. Bake at 375 degrees for 40 min.

Blueberry Jello Salad

Ingredients:

  • 2 small boxes black cherry Jello
  • 1 large can crushed pineapple
  • 2 (15 ounces) cans blueberries, drained
  • 2 small packages Cream Cheese
  • 8 ounces sour cream
  • 1 tablespoon vanilla
  • 1/2 cup sugar
  • 1/2 cup pecans (finely chopped)
Follow directions on Jello box; mix in pineapple and blueberries (drained). After it jells, mix together topping: Cream cheese, sour cream, vanilla, and sugar. Put topping on Jello mixture. Sprinkle with chopped pecans. Refrigerate overnight.
