Made with ripe, mashed bananas, these cookies are actually good for you.

Ingredients:
- 1 cup all-purpose flour
- 1 teaspoon salt
- 1 teaspoon cinnamon
- 1 teaspoon baking soda
- 3 cups quick cooking oats
- 3/4 cup shortening
- 1 cup packed brown sugar
- 1/2 cup granulated sugar
- 1 egg
- 1 teaspoon vanilla
- 1 cup mashed banana
- 2 cups chocolate chips
Preparation:
Combine flour, salt, cinnamon, baking soda and oats; set aside.
Next, cream together shortening, brown sugar and granulated sugar. (I used my mixer.)
Then add:
1 egg, vanilla, 1 cup mashed banana (I used 4 small ones, for a very generous cup full).
Combine wet mixture with dry mixture, and add 2 cups chocolate chips (1 12-ounce package).
Drop by rounded spoonfuls onto greased cookie sheet (I used parchment paper instead), and bake 12 to 15 minutes, at 350 degrees Fahrenheit. - Jill, forum member
