No Bake Peanut Butter Logs

This recipe makes about 7 1/2 dozen cookies but they won't last long!

Prep Time: 15 minutes

Ingredients:

  • 1 3/4 cups powder sugar
  • 1/4 cup butter or margarine
  • 2 cups crisp rice cereal (Rice Krispies or generic)
  • 1 cup crunchy peanut butter
  • Chocolate frosting

Preparation:

Combine powdered sugar and butter or margarine in a large bowl.and beat with a mixer until it comes out smooth. Stir in the peanut butter and cereal. You may need to mix with your hands as it sticks to the spoon. Shape dough into logs about the size of your pinky.

Place logs onto a cookie sheet that you have covered with wax paper. Stick in the refrigerator for about 1 hour. Put the chocolate frosting on the logs and put back in the refrigerator until frosting sets.

I take mine out of the refrigerator about 20 minutes before I'm going to serve for guests with the family I just leave them covered in the refrigerator and they grab what they want and then cover again.
