Tea Cookies

These cookies can be rolled out and cut into desired shapes.

Prep Time: 15 minutes

Cook Time: 12 minutes

Ingredients:

  • 2 cups brown sugar
  • 3/4 cup solid shortening (margarine works fine)
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla
  • 2 eggs
  • 1 1/2 teaspoons baking soda dissolved in 2 tablespoons hot water
  • all purpose flour

Preparation:

Cream sugar and shortening. Add salt and vanilla. Beat well. Add lightly beaten eggs and beat well. Add soda/water mixture. Stir in enough flour to make a ball(I use my hands here because the dough gets stiff). Refrigerate dough to make it easier to roll out. Roll out and cut into desired shapes. Sprinkle with colored sugar if desired.

Bake on ungreased cookie sheets in 350 degree oven for 10-12 min or until lightly browned. - Lynn, forum member
