Mini Cheesecakes

Great for the holidays, these are individual cheesecakes.

Prep Time: 15 minutes

Cook Time: 30 minutes

Ingredients:

  • 1 package (8 ounce) cream cheese, softened
  • 1/3 cup sugar
  • 1 egg
  • 1 teaspoon Vanilla Extract
  • 1/4 teaspoon Almond Extract
  • 12 vanilla wafer cookies (or chocolate wafers)
  • fresh or canned fruit

Preparation:

Beat cream cheese until light and fluffy. Gradually beat in sugar, scraping sides of bowl. Add egg and beat well. Mix in extracts.

Arrange paper liners in 12 (2-1/2-inch) muffin cups. Place a wafer in bottom of each muffin cup. Evenly divide cheese mixture among cups.

Bake in 350*F oven 25-30 min. or until edges are lightly browned. Refrigerate overnight.

Serve topped with fresh or canned fruit. - Kim, forum member
