Ingredients:
- 1 package (8 ounce) cream cheese, softened
- 1/3 cup sugar
- 1 egg
- 1 teaspoon Vanilla Extract
- 1/4 teaspoon Almond Extract
- 12 vanilla wafer cookies (or chocolate wafers)
- fresh or canned fruit
Preparation:
Beat cream cheese until light and fluffy. Gradually beat in sugar, scraping sides of bowl. Add egg and beat well. Mix in extracts.Arrange paper liners in 12 (2-1/2-inch) muffin cups. Place a wafer in bottom of each muffin cup. Evenly divide cheese mixture among cups.
Bake in 350*F oven 25-30 min. or until edges are lightly browned. Refrigerate overnight.
