I don't normally like dark meat on chicken, find it too greasy, but boiling does away with that altogether. If you do it by bulk, it can be frozen in meal size bunches, or loosely frozen, for single use purposes. My kids love chicken fried rice, so I also keep some pre-cooked rice in the fridge. I have also been keeping cooked pasta for one dish lunches, suppers or salad. A quick cheese sauce with leftover pasta veggies can pass as an elegant Alfredo. - Submitted by Pathfinder
