Stretch a Roast

I buy meat in bulk at Costco (a warehouse type store). I repackage the meat to feed a family of three. When my step kids are here, I use two packages. I buy a large pork roast and cut it up in three or four sections and use cotton string to tie each section a little more securely. After we have a roast, we usually have leftovers. I take the leftover pork, cut it in cubes and make a large batch of chili to have one night and freeze the rest. I also make spaghetti sauce about every month or so and freeze it in containers. We get about 9 meals from one batch of sauce and you are not limited to just have it with spaghetti noodles; there is lasagna and chicken parmesan, too. It is a very quick meal, too, for those days when you are running behind. - Submitted by Jo
