Southwest Chicken Manicotti

This recipe for chicken manicotti is a good way to use up any leftover chicken or turkey you may have in your refrigerator. Use a teaspoon for ease in filling the manicotti with the chicken mixture. I used green chili enchilada sauce instead of the salsa called for in the recipe.

Prep Time: 20 minutes

Cook Time: 35 minutes

Ingredients:

  • 1 1/2 cups cut up cooked chicken or turkey
  • 1 cup ricotta cheese (could substitute cottage cheese)
  • 4 ounces cream cheese, softened
  • 1 bunch sliced green onion
  • fresh or dried cilantro, to taste
  • 1 finely chopped garlic clove
  • 1 cup salsa or 1 can green chile enchilada sauce

Preparation:

Combine all these ingredients; fill manicotti shells with mixture.

Put in a 13x9 inch baking pan. Pour 1 cup or so of salsa over the shells, top with Monterey Jack cheese. Cook for about 35 minutes at 325 degrees.
