Ingredients:
- 1 1/2 cups cut up cooked chicken or turkey
- 1 cup ricotta cheese (could substitute cottage cheese)
- 4 ounces cream cheese, softened
- 1 bunch sliced green onion
- fresh or dried cilantro, to taste
- 1 finely chopped garlic clove
- 1 cup salsa or 1 can green chile enchilada sauce
Preparation:
Combine all these ingredients; fill manicotti shells with mixture.Put in a 13x9 inch baking pan. Pour 1 cup or so of salsa over the shells, top with Monterey Jack cheese. Cook for about 35 minutes at 325 degrees.
