Perogies

Make your own homemade perogies and fill them with whatever your family likes.

Ingredients:

  • 4 cups flour
  • 2 eggs
  • about 1 teaspoon salt
  • 1 cup warm water

Preparation:

Put 3 cups of flour in a large bowl (set 1 cup of flour off to the side). Make a well in the center of the flour and add 2 eggs, a sprinkle of salt, 1 cup warm water. Stir all these ingredients together (will be sticky).

Now slowly add enough of the 1 cup of flour to make a smooth and soft dough (kneading in the additional flour; I rub cooking oil on my hands before I knead.). Cover the dough (I use an air tight Tupperware container) and let rest for about 45 minutes. I roll out on a floured surface. I also pinch the edges together tightly with flour as well. After 30 minutes I prepared the second batch of dough to allow this to rest while I roll and fill my first batch. Fill with whatever filling you like best.
