Meatloaf with Veggies

This meatloaf with vegetables is a meal in itself.

INGREDIENTS:

  • 1 1/4 pound ground beef
  • 1 shredded carrot (if it's a small one, I use 2 carrots)
  • parsley, to taste
  • salt, pepper, to taste
  • paprika, to taste
  • fresh bread crumbs (2 slices)
  • 1 egg
  • a little bit of Worchestershire sauce
  • some ketchup if it's on the dry side (maybe 2 tablespoons)
  • beef bouillion (1 cube or 1 teaspoon)
  • an onion, in rings on top
  • Occasionally cheese
  • Occasionally I chopped up a potato and throw that in with the meat

PREPARATION:

Mix all ingredients; bake at 350 for about 1 to 1 1/2 hour. - Aubra
