Easy to make, this recipe makes two coconut pies.

Cook Time: 40 minutes
Ingredients:
- 1 stick (1/2 cup) margarine softened
- 3/4 cup sugar
- 4 eggs
- 1 can sweetened condensed milk
- splash of regular milk
- 1 teaspoon vanilla
- 12 ounces coconut (I used 2 7-ounce bags)
- 2 frozen regular pie shells
Preparation:
Cream margarine and sugar. Beat in eggs and condensed milk. Add regular
milk and vanilla. Stir in coconut. Divide between 2 pie shells. Cook on
baking sheet 350 for about 40 minutes. Freezes well. - Lynn
