Chicken Cacciatore

Serve this classic chicken dish over rice or pasta.

INGREDIENTS:

  • 1/4 cup oil
  • 1 medium onion, chopped
  • 1 large red or yellow pepper, sliced
  • 2 or 3 cloves garlic, minced
  • 1 cup sliced mushrooms
  • 1 chicken, cut up
  • 2 cans tomato sauce
  • 1 can tomatoes
  • 3 teaspoons Italian seasoning
  • salt and pepper

PREPARATION:

Cook onion, pepper, garlic and mushrooms in about half the oil until onions are transparent, then remove to a separate dish. Brown chicken pieces in remaining oil. Add tomatoes and tomato sauce. Add onions and peppers, then season. Bring to a boil. Cover and simmer for 40 minutes. Serve over pasta or rice. - Kimmer
