Chicken with Hot Peanut Sauce

Although it sounds unusual, chicken flavored with a peanut sauce is very tasty.

INGREDIENTS:

  • 1 tablespoon peanut butter
  • 2 teaspoon soy sauce
  • 2 teaspoon red wine vinegar
  • hot pepper flakes to taste
  • 1 teaspoon vegetable oil
  • 2 teaspoon minced garlic
  • 1 teaspoon minced ginger
  • Boneless chicken, cut in bite size cubes or strips

PREPARATION:

Mix first 4 ingredients.

sauté chicken, garlic and ginger, in oil over medium heat, until chick is no longer pink inside.

Stir in peanut butter mixture and simmer, stirring regularly for about 3-5 minutes until slightly thickened.

This is great with Fettucine Afredo and green vegetables. - Nina
