Poppyseed Chicken

You can use a whole chicken or chicken breasts in this baked casserole.

Prep Time: 1 hours, 15 minutes

Cook Time: 25 minutes

Ingredients:

  • Chicken, whole or pieces
  • 1 can cream of mushroom soup
  • 8 ounces sour cream
  • 1 tablespoon poppyseeds
  • 1 tube Ritz crackers
  • 1/4 cup melted butter or margarine

Preparation:

Boil chicken until tender, about an hour. (I use boneless skinless breasts but have friends who use a whole chicken or mixed pieces to save money.)

Cut up the chicken into bite size pieces.

Mix chicken with cream of mushroom soup and sour cream. Add poppyseeds.

Pour chicken mixture into buttered casserole dish. Top with one tube of crushed Ritz crackers. Drizzle melted butter or margarine over top.

Bake at 350 for about 25 to 30 minutes.
