This seasoned chicken is served on a bed of rice.

Ingredients:
- 1 stick butter (1/2 cup)
- 1/4 cup of olive oil
- 1/4 cup green onions, chopped
- 1 tablespoon garlic, minced
- 2 pounds chicken breasts, boneless and skinless, cut into 1/2" pieces
- Juice of one lemon
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup fresh parsley, minced
- 1 tomato, chopped
- Cooked hot rice
Preparation:
In skillet, heat together margarine and olive oil
and sauté onions and garlic. Add chicken, lemon juice, salt, pepper and
parsley. Continue cooking, stirring constantly, for 5-8 minutes or until
chicken is done. Add tomatoes and heat through. Serve over hot rice. - Kim
