Chicken Scampi

This seasoned chicken is served on a bed of rice.

Cook Time: 10 minutes

Total Time: 20 minutes

Ingredients:

  • 1 stick butter (1/2 cup)
  • 1/4 cup of olive oil
  • 1/4 cup green onions, chopped
  • 1 tablespoon garlic, minced
  • 2 pounds chicken breasts, boneless and skinless, cut into 1/2" pieces
  • Juice of one lemon
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup fresh parsley, minced
  • 1 tomato, chopped
  • Cooked hot rice

Preparation:

In skillet, heat together margarine and olive oil and sauté onions and garlic. Add chicken, lemon juice, salt, pepper and parsley. Continue cooking, stirring constantly, for 5-8 minutes or until chicken is done. Add tomatoes and heat through. Serve over hot rice. - Kim
