Shepherds Pie With Veggies

Made with peas and carrots and topped with mashed potatoes, this is a meal in a dish.

Prep Time: 15 minutes

Cook Time: 20 minutes

Ingredients:

  • 1 pound lean ground beef
  • 2 tablespoons corn starch
  • 1 large onion, chopped
  • 4 cup mashed potatoes
  • 2 beef cubes or 2 teaspoon beef stock
  • 1 1/2 cup water
  • 1/2 cup grated chedder cheese
  • 2 carrots, diced, cooked
  • 1/2 cup frozen peas, cooked and drained

Preparation:

Lightly brown onion in a little fat. Add ground beef and brown. Crumble stock cubes or sprinkle on stock powder. Add 1 cup water, carrots and peas; simmer 10 minutes. Thicken with corn starch mixed in 1/2 cup of water. Cook 2 minutes.

Spread in baking dish, cover with seasoned mashed potatoes. Sprinkle cheese on top. Bake 20 minutes at 375 degrees until potato is heated and browned on top.- Sue
