From About.com

Hash Brown Casserole, creamy soup, and crushed cornflakes add flavor to frozen hash browns in this easy side dish.

Prep Time: 15 minutes

Cook Time: 1 hour

Ingredients:

  • 1 (32 ounce) pkg. hash browns potatoes
  • salt to taste
  • 1/4t. pepper
  • 1 can of cream soup(any kind)
  • 1(8oz.) carton sour cream
  • 1/2c. butter or margarine
  • 1/2 c. chopped onion
  • 1(8oz.) pkg. Velveeta cheese
  • 2c. Cornflakes(topping)
  • 1/2c. butter or margarine(topping)

Preparation:

Heat all ingredients except potatoes in saucepan until cheese melts. Put Potatoes in 9 x 13-inch greased pan. Fold mixture into potatoes. Top with 2 cups of crushed corn flakes mixed with 1/2 cup of butter. Bake at 350 degrees for 1 hour. Recipe can be made ahead and frozen, but add topping only when ready to bake.

If you wanted to make this the main dish, you could probably add ham with good results. One thing I will recommend is using "original" ingredients. What I mean is; I tried using reduced fat ingredients once, and it wasn't nearly as good! - Burton
