This variation of an eight layer salad is so easy and tasty. This recipe is nice for a potluck or family picnics.

Ingredients:
- 8-12 ounce package salad mix, any variety
- 12 ounces cottage cheese
- 1/2 cup red onion, chopped
- 12 ounce package frozen peas, thawed
- 1/2 cup shredded cheese (I used colby-jack cheese)
- 6 hard-boiled eggs, chopped
- 1 cup Ranch salad dressing
- 1 cup crumbled bacon bits (can use packaged or real bacon, fried)
Preparation:
In a large, clear bowl or baking dish, layer all ingredients in the order listed. Chill in the refrigerator for at least an hour. This salad will serve at least 6 to 8 people. - Barb
