Farm Style Scalloped Potatoes

Made with rich heavy cream, this recipe is not low calorie, but it's so good.

Prep Time: 20 minutes

Cook Time: 1 hours,

Ingredients:

  • 2-3 potatoes per serving (for 6 people, use 12 potoatoes)
  • 2 onions
  • 8 tablespoons butter (or margarine)
  • 2 tablespoon flour
  • salt and pepper
  • cream

Preparation:

Peel and slice about 2-3 potatoes per person. Slice 1-2 onions.

Place a layer of potatoes and onions in a large baking pan. I use a large deep corning ware dish( 12x12), greased.

Then top with about 4 slices of butter and sprinkle about 1 tablespoon of flour on top of the potatoes and onions, salt and pepper to taste, then place another layer of potatoes, onions, butter and flour, salt and pepper; add another layer.

Then top all of this with whip cream. I use to use plain whip cream but the lady that taught me this told me to use the thickest whip cream I can find, and so now I buy the old-fashioned heavy whip cream and mix with the regular whip cream. Fill the pan up and don't get it too full but make sure the cream covers it all.

Place in a 350-400 degree oven and bake. It takes about an hour or more depending on how big of a batch you make.

Also place a cookie sheet on the lower rack as it some times cooks over. This feeds quite a few people, about 8 or so. - MarshaSue
