Prep Time: 15 minutes
Ingredients:
- 2 tablespoons lemon juice
- 1/3 cup olive oil
- 1 small clove garlic - minced
- 1/2 teaspoon dijon mustard
- 1/2 teaspoon salt - I like sea salt
- a few cracks of pepper
- 1 lb of washed spinach
- 3 - 6 greens onions, sliced
- 1 cup pecans or walnuts - toasted or raw
Preparation:
Combine first 6 ingredients (lemon juice to pepper). I like to throw a couple of ice cubes in to chill the dressing.Toss with the remaining ingredients.
I like to toast the pecans. The original recipe calls for walnuts, but I don't like them. - ATMmom
