Spinach Salad

We all know that spinach is good for us, so here's a flavorfull spinach salad.

Prep Time: 15 minutes

Ingredients:

  • 2 tablespoons lemon juice
  • 1/3 cup olive oil
  • 1 small clove garlic - minced
  • 1/2 teaspoon dijon mustard
  • 1/2 teaspoon salt - I like sea salt
  • a few cracks of pepper
  • 1 lb of washed spinach
  • 3 - 6 greens onions, sliced
  • 1 cup pecans or walnuts - toasted or raw

Preparation:

Combine first 6 ingredients (lemon juice to pepper). I like to throw a couple of ice cubes in to chill the dressing.

Toss with the remaining ingredients.

I like to toast the pecans. The original recipe calls for walnuts, but I don't like them. - ATMmom
