Slow Cooker Pinto Beans

After they are done cooking, you can mash these for refried beans.

Prep Time: 15 minutes

Cook Time: 8 hours

Ingredients:

  • 1 package dried pinto beans (soaked in water overnight, if desired)
  • 5-10 cloves of garlic
  • 2-3 bay leaves
  • some dried red chilies, optional

Preparation:

These are super easy.

Rinse pinto beans and fill crock pot about 1/3 full. Add water until about an inch from the top. Add 5-10 cloves of garlic, 2-3 bay leaves, some dried red chilies if you've got 'em and slow cook on low heat for 5-8 hours.

If you like 'em soupy, don't mash the beans. If you want more of a refried bean consistency, then mash 'em. We eat these over corn bread and put them in burritos, or just pour salsa over them and dip chips! Lots of protein and very yummy! - From Renee
