Kid's Health Bars

Even though these bars are good for them, your kids should still love these snacks.

Prep Time: 15 minutes

Cook Time: 30 minutes

Total Time: 45 minutes

Ingredients:

  • 2 tablespoons soft margarine
  • 2 tablespoons brown sugar
  • 1 tablespoon honey
  • 1 tablespoon light molasses
  • 1 cup quick rolled oats
  • 2 tablespoons whole wheat flour (or regular)
  • 2/3 cup dried fruits
  • 1 tablespoon margarine
  • 1/2 cup boiling water
  • 1 egg, slightly beaten
  • 1/4 cup regular or wheat flour
  • 2 tablespoons wheat germ
  • 2 tablespoons wheat bran (can substitute flour)
  • 3/4 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup chopped walnuts

Preparation:

Combine first 6 ingredients. Press into greased (buttered) 8x8 inch baking pan. Bake at 350 degrees for 5 minutes

Meanwhile in same bowl (after placing bottom crust in pan), combine 2/3 cup mixed, snipped dried fruits (look for dried fruit pieces-easier). I am always much more generous with my amounts of fruit, too. 1 tablespoon margarine, 1/2 cup boiling water. Let stand for 5 minutes.

Add to fruit mixture: 1 slightly beaten egg or 1/4 cup egg beaters, 1/4 cup packed brown sugar, 1/4 cup regular or wheat flour, 2 tablespoons wheat germ, 2 tablespoons wheat bran (can substitute 2 tablespoons flour), 3/4 tsp cinnamon, 1/2 tsp salt, 1/2 cup chopped walnuts Stir together until well blended. Spread over prebaked bottom crust.

Return to 350 degree oven and bake for 25-30 mins. Cool. Cut into squares. Good refrigerated or warm. - Maidy
