Fiesta Nacho Potato Cheese Soup

This is a very tasty Tex-Mex soup.

Prep Time: 5 minutes

Cook Time: 5 minutes

Ingredients:

  • 1 14-ounce can tomatoes and green chilis or a can of Mexican stewed tomatoes
  • 1 can Campbells Fiesta Nacho cheese soup
  • 1 can cream of Potato soup
  • 1 11-ounce can of Mexican corn - the recipe says drained but added the juice for flavor
  • 2 cups milk ( you can add more depending on how thin you like your soup)
  • 2 tablespoons Mexican Seasoning...usually this is a mixture of chili powder,cumin, Mexican oregano
  • 4 ounces shredded cheddar cheese

Preparation:

Combine all ingredients in a saucepan. Bring to a boil, lower heat and simmer for 5 minutes stirring occasionally. SO quick and easy. I think it would taste good with chicken added to it but it was great just like this. - Marsha
