Killer Chicken Noodle Soup

Kim shared this recipe and said, "This is the Chicken Noodle Soup I would make when I got colds or the flu in college. I call it "Killer" because I swear, it hunts down and destroys germs within a 3 mile radius!"

Prep Time: 10 minutes

Cook Time: 20 minutes

Ingredients:

  • 1 chicken breast, cut into chunks
  • 1 small onion
  • 2 cloves garlic, minced
  • 1 can (low sodium) chicken broth
  • 2 medium carrots, sliced
  • pasta or rice
  • salt, black pepper

Preparation:

Brown the onion, garlic, and chicken in a saucepan. Add the chicken broth, then the carrots. Season to taste. Bring to a boil, then simmer until the carrots just start to get soft. Add the pasta, and cook until done (if you use rice instead, put it in at the same time as the carrots, and add some water with the broth). When I was sick, I would really load up on the black pepper. My nose would run like crazy, but it always made me feel better! This, of course, is a pretty small serving, but you get the idea on how it works. - Kim
