This spicy chili recipe calls for both ground beef and sausage.

Prep Time: 20 minutes

Cook Time: 1 hour, 30 minutes

Ingredients:

  • 1 pound ground beef--or round steak cut into chunks
  • 1 pound ground pork --or boneless pork loin cut into chunks
  • 1 large onion chopped
  • 2 large cans of chopped tomatoes
  • 1 large can of tomato sauce
  • 1 can of beef stock or 1 12-ounce can of domestic beer
  • 1/2 teaspoon garlic
  • 1 teaspoon Mexican oregano
  • 1 1/2 teaspoons cumin
  • 1-2 teaspoons chili powder
  • 1 can green chilis( mild or hot)
  • dash of cayenne
  • salt and pepper
  • optional ingredient: 1 can of chili beans

Preparation:

Brown onion then add beef and pork; brown until no longer pink. Add the remaining ingredients and cook at least 1 hour (or until pork is thoroughly cooked). Taste and adjust seasoning. Then cook for another 1/2 hour. If the chili isn't as thick as you like add a little cornmeal mixed with water and whisk into the chili.

Serve in bowls topped with cheese, chopped onions and sour cream.

Chili usually taste better the second day after the flavors have had a chance to meld together. - Marsha Sue
