Cook Time: 1 hour, 30 minutes
Ingredients:
- 1 pound ground beef--or round steak cut into chunks
- 1 pound ground pork --or boneless pork loin cut into chunks
- 1 large onion chopped
- 2 large cans of chopped tomatoes
- 1 large can of tomato sauce
- 1 can of beef stock or 1 12-ounce can of domestic beer
- 1/2 teaspoon garlic
- 1 teaspoon Mexican oregano
- 1 1/2 teaspoons cumin
- 1-2 teaspoons chili powder
- 1 can green chilis( mild or hot)
- dash of cayenne
- salt and pepper
- optional ingredient: 1 can of chili beans
Preparation:
Brown onion then add beef and pork; brown until no longer pink. Add the remaining ingredients and cook at least 1 hour (or until pork is thoroughly cooked). Taste and adjust seasoning. Then cook for another 1/2 hour. If the chili isn't as thick as you like add a little cornmeal mixed with water and whisk into the chili.Serve in bowls topped with cheese, chopped onions and sour cream.
