This is a savory recipe for white bean soup.

Cook Time: 20 minutes
Ingredients:
- 1 tbs oil
- 1 med onion- chopped
- 2 medium carrots- sliced
- 2 stalks of celery - sliced
- 1 clove of garlic
- 2 19 oz cans of White Kidney beans or Cannelloni- rinsed and drained
- 1 envelope of dry Herb soup mix
- 2 cups of water
- 3 cups of escarole or spinach coarsely chopped
- 1 medium tomato diced
- 1/4 cup feta cheese
Preparation:
In large pan saute onion, carrots, celery and garlic - then stir in beans
and herb soup mix. Add water and bring mixture to a boil.
simmer about 20 minutes. Now add the spinach/escarole and tomato and
cook for about 2-4 minutes longer. Serve in bowls topped with Feta
