PREPARATION:My dad used to make (and now the kids do) this unusual potato salad. You take your bag of (preferably) salt potatoes and boil them till just cooked. Drain and cool, peel and slice up (I use an egg slicer) and put in a big, deep bowl. Now in a sauce pan take one part water, one part white vinegar and one part white sugar. Stir until the sugar is melted and bring to a boil. Pour over the potatoes and let set in the fridge for at least 12 hours (overnight is even better). Drain and add celery seed (optional), chopped onion and a little pepper. Now when we were kids we always added mayonnaise (not Salad Dressing) but dad started taking half mayo and half plain. He said the plain was for the cholesterol free crowd. BTW the name for this one is "Bud's Potato Salad" for my dad. |
